POTLATCH SALMON

Serves 6


Ingredients

  • 6 salmon steaks(about 1/2 lb each)
  • 1 tablespoon juniper berries (about 50)
  • 2 teaspoons salt 1/8 teaspoon pepper
  • lemon or lime wedges mayonnaise

Directions 

Lightly crush juniper berries. Push 6-8 berries into each steak. Sprinkle fish with salt and pepper. Grill over coals 5-6 minutes on each side. Garnish with lemon wedges and mayonnaise.
